Lamb rack | 4 pcs |
Coconut milk | 1 cup |
Exotic Food Massaman Curry Paste | 2 tbsp |
Carrot, sliced lengthwise | half |
Zucchini, sliced lengthwise | half |
Eggplant, sliced lengthwise | half |
Garlic, chopped | 1 tbsp |
Rosemary | 3-4 twigs |
Olive oil | 2 tsp |
Fish sauce | 1/4 tsp |
Salt | 1/4 tsp |
Black pepper, ground | 1/4 tsp |
PROCEDURE
1. Marinate lamb, carrot, zucchini, eggplant with salt,
pepper, garlic, rosemary and olive oil
2. Make the sauce by heating 2 tbsp of coconut milk in
sauce pot, add curry paste and cook until fragrant.
3. Add the rest of coconut milk, season with fish sauce
then simmer until reduced.
4. Grill the lamb and vegetable and serve immediately
with sauce.
