Black pepper mussels

Ingredients

A lush, dried chili sauce. Sriracha Black Chili will guarantee to make your hot food even hotter, with the hint of Thailand’s famous dried chili. It is sure to leave your mouth with a spicy after taste.
  • 3tbsp Sriracha Black Chilli Sauce
  • 3tbsp oyster sauce
  • 3tbsp caster sugar
  • 2 lb mussels, cleaned
  • 1 1⁄2tbsp oi
  • 1 1⁄2tbsp fresh ginger
  • 11 1⁄2tbsp butter
  • 16 garlic cloves
  • 11 -2 red chile, finely chopped
  • 11⁄4cup chopped fresh coriander

Instructions

  • Place the chicken breast pieces into a bowl or freezer bag with the yogurt, garlic, lemon juice, Srirachatikka Sauce, salt and pepper.
  • Mix together so that everything is combined, then cover and place in the fridge to marinate for 2-3 hours.
  • Remove the marinated chicken from the fridge and thread onto skewers.
  • Brush the chicken with the oil, then place on a griddle plate and cook, turning a couple of times, for 8-10 minutes until cooked through.
  • Serve with a sprinkling of freshly chopped coriander.
